Goan fish curry is a popular dish from the coastal state of Goa in India. It is known for its vibrant flavors and the use of aromatic spices. Here's a recipe to help you make a delicious Goan fish curry


Ingredients:

1-1 pound firm white fish fillets (such as cod or tilapia), cut into medium-sized pieces

2-2 tablespoons vegetable oil

3-1 onion, finely chopped

4-3 cloves garlic, minced

5-1-inch piece of ginger, grated

6-2 green chilies, slit lengthwise (adjust according to your spice preference)

7-1 teaspoon ground turmeric

8-1 teaspoon ground coriander

9-1 teaspoon ground cumin

10-1 teaspoon paprika

11-1 cup coconut milk

12-1 cup water

13-2 tomatoes, diced

14-1 tablespoon tamarind paste or juice of 1 lemon

15-Salt to taste

16-Fresh cilantro leaves for garnish

For the spice paste:

1-1 teaspoon cumin seeds

2-1 teaspoon coriander seeds

3-5-6 dried red chilies (adjust according to your spice preference)

4-4-5 peppercorns

5-1/2 teaspoon fenugreek seeds

6-4 cloves

7-4-5 garlic cloves

8-1-inch piece of ginger, chopped

9-1 tablespoon vinegar

Instructions:

*In a dry skillet, roast the cumin seeds, coriander seeds, dried red chilies, peppercorns,   fenugreek seeds, and cloves until fragrant. Be careful not to burn them.

*Transfer the roasted spices to a blender or spice grinder and add the garlic, ginger, and   vinegar. Blend until you have a smooth paste, adding a little water if needed. This is your   spice paste.

*Heat the vegetable oil in a large pan or skillet over medium heat.

*Add the chopped onion, minced garlic, grated ginger, and slit green chilies. Sauté until the   onion becomes translucent.

*Add the spice paste to the pan and cook for a few minutes to release the flavors.

*Stir in the ground turmeric, ground coriander, ground cumin, and paprika. Cook for   another minute.

*Pour in the coconut milk and water. Stir well to combine.

*Add the diced tomatoes and tamarind paste (or lemon juice) to the pan. Season with salt to   taste.

*Bring the mixture to a simmer and let it cook for about 5 minutes to allow the flavors to   meld together.

*Gently place the fish fillets into the sauce, making sure they are submerged. Cook for   about 5-7 minutes, or until the fish is cooked through and flakes easily.

*Garnish with fresh cilantro leaves.

*Serve the Goan fish curry hot with steamed rice or crusty bread.
