Paya is a flavorful and rich stew made from lamb or goat trotters. It is a popular dish in various cuisines, including Pakistani, Indian, and Middle Eastern. Here's a recipe to help you make a delicious Paya:


Ingredients:

1-4-6 lamb or goat trotters (cleaned and cut into pieces)

2-2 tablespoons vegetable oil

3-2 onions, finely chopped

4-4 cloves garlic, minced

5-1-inch piece of ginger, grated

6-2 tomatoes, chopped

7-2 teaspoons red chili powder (adjust according to your spice preference)

8-1 teaspoon turmeric powder

9-2 teaspoons coriander powder

10-1 teaspoon cumin powder

11-1 teaspoon garam masala

12-Salt to taste

13-6 cups water

14-Fresh cilantro leaves for garnish

15-Ginger slices and green chilies for serving

16-Lemon wedges for serving

17-Roti or naan bread for serving

Instructions:

*Heat the vegetable oil in a large pot or pressure cooker over medium heat.

*Add the chopped onions to the pot and sauté until golden brown.

*Stir in the minced garlic and grated ginger, and cook for another minute.

*Add the chopped tomatoes and cook until they soften.

*Add the red chili powder, turmeric powder, coriander powder, cumin powder, garam   masala, and salt. Mix well and cook for a couple of minutes to toast the spices.

*Add the lamb or goat trotters to the pot and coat them with the spice mixture.

*Pour in the water and bring it to a boil.

*If using a pressure cooker, cover it with the lid and cook on high pressure for about 30-40   minutes. If using a regular pot, cover it and simmer for 3-4 hours until the trotters are   tender and the flavors have developed. Stir occasionally and add more water if needed.

*Once the trotters are cooked and tender, remove them from the pot and set them aside.

*If desired, use an immersion blender or a blender to blend the gravy until smooth.

*Return the trotters to the pot and simmer for another 15-20 minutes to allow the flavors to   meld together.

*Adjust the seasoning if needed.

*Serve the Paya hot, garnished with fresh cilantro leaves. Serve with ginger slices, green   chilies, lemon wedges, and roti or naan bread on the side.

Paya is a dish that requires slow cooking to achieve the desired tenderness and depth of  flavor. It is often enjoyed as a hearty and satisfying meal, especially during the colder months.
