Halwa Puri is a popular Pakistani and Indian breakfast dish consisting of a sweet semolina pudding called halwa, served with deep-fried bread called puri. It's a delightful combination of flavors and textures. Here's a recipe to make Halwa Puri:
For the Halwa:
Ingredients:
1-1 cup semolina (sooji/rava)
2-1/2 cup ghee or clarified butter
3-1 cup sugar
4-2 cups water
5-1/4 teaspoon cardamom powder
6-A handful of chopped nuts (such as almonds, pistachios, and cashews)
7-A pinch of saffron strands (optional)
8-1 tablespoon raisins (optional)
Instructions:
*Heat ghee in a large pan or skillet over medium heat.
*Add semolina to the pan and roast it, stirring continuously, until it turns golden brown and aromatic. This process may take about 7-10 minutes. Be careful not to burn it.
*In a separate saucepan, bring water to a boil
*Slowly pour the boiling water into the roasted semolina while stirring continuously to avoid lumps.
*Add sugar, cardamom powder, saffron strands (if using), and mix well.
*Reduce the heat to low and cook the mixture, stirring continuously, until it thickens and starts to leave the sides of the pan. This may take around 5-7 minutes.
*Add the chopped nuts and raisins (if using) and mix well.
*Remove the halwa from heat and keep it covered to retain its moisture.
For the Puri:
Ingredients:
1-2 cups whole wheat flour
2-1/2 teaspoon salt
3-Water (as needed)
4-Oil for deep frying
Instructions:
1-In a mixing bowl, combine whole wheat flour and salt.
2-Gradually add water and knead to form a soft dough. The dough should be smooth and pliable.
3-Cover the dough and let it rest for about 15-20 minutes.
4-Divide the dough into small portions and roll each portion into a small round disc, around 3-4 inches in diameter.
5-Heat oil in a deep frying pan or wok over medium heat.
6-Once the oil is hot, carefully slide one puri into the oil and press gently with a slotted spoon. This will help the puri to puff up.
7-Fry the puri until it turns golden brown on both sides. Flip it once during cooking. This process usually takes about 1-2 minutes.
8-Remove the puri from the oil using a slotted spoon and drain excess oil on a paper towel.
9-Repeat the process with the remaining dough to make more puris.
To Serve:
Serve the hot and crispy puris with the warm halwa. Garnish the halwa with additional chopped nuts, if desired. Some people also enjoy Halwa Puri with a side of chana masala (chickpea curry) or aloo ki bhujia (spiced potato dish). It's a delightful breakfast or brunch option enjoyed by many.
