Chapshurro, also known as Chapshoro or Chapshoro Kabob, is a traditional dish from Uzbek cuisine. It is a savory meat-filled pastry that is typically enjoyed with a side of yogurt or salad. Here's a recipe for making Chapshurro:



Ingredients:

For the dough:

1-3 cups all-purpose flour

2-1 teaspoon salt

3-1 cup warm water

4-2 tablespoons vegetable oil

For the filling:

1-1 pound ground beef or lamb

2-1 onion, finely chopped

3-2 cloves garlic, minced

4-1 teaspoon ground cumin

5-1 teaspoon ground coriander

6-1 teaspoon paprika

7-Salt and pepper, to taste

For brushing:

2 tablespoons melted butter

Instructions:

*In a large mixing bowl, combine the flour and salt for the dough. Gradually add warm   water and mix until a soft dough forms.

*Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth   and elastic.

*Divide the dough into 4 equal portions and shape each portion into a ball. Cover the dough   balls with a damp cloth and let them rest for 30 minutes.

*In a separate bowl, combine the ground meat, chopped onion, minced garlic, ground   cumin, ground coriander, paprika, salt, and pepper. Mix well to incorporate all the   ingredients.

*Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

*Take one dough ball and roll it out into a thin circle, approximately 8-10 inches in   diameter.

*Place about a quarter of the meat filling on one half of the dough circle, leaving a small   border around the edges.

*Fold the other half of the dough over the filling to create a half-moon shape. Press the   edges firmly to seal.

*Repeat the process with the remaining dough balls and filling.

*Transfer the chapshurro to the prepared baking sheet and brush the tops with melted butter.

*Bake in the preheated oven for about 25-30 minutes or until golden brown.

*Remove from the oven and let them cool for a few minutes before serving.

*Cut the chapshurro into slices and serve it with yogurt or a side salad.




Chapshurro is a delightful and filling dish that can be enjoyed as a main course or as a snack. Its flaky pastry and flavorful meat filling make it a favorite in Uzbek cuisine.
