Cheese Sambusak, also known as Cheese Pastry Pie, is a delicious Middle Eastern savory pastry filled with a mixture of cheese and herbs. Here's a recipe to make Cheese Sambusak


Ingredients:

For the dough:

1-2 cups all-purpose flour

2-1/2 teaspoon salt

3-1/2 cup unsalted butter, cold and cubed

4-1/2 cup plain yogurt

5-2 tablespoons cold water

For the filling:

1-2 cups shredded cheese (such as feta, mozzarella, or a combination)

2-1/2 cup chopped fresh parsley

3-1/4 cup chopped fresh mint

4-1/4 teaspoon black pepper

For brushing:

1 egg, beaten

Instructions:

*In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and use your   fingers or a pastry cutter to rub the butter into the flour until it resembles coarse crumbs.

*Add the yogurt and water to the mixture and knead gently until the dough comes together.   If needed, add a little more water, one tablespoon at a time. Do not over-knead.

*Shape the dough into a ball, cover it with plastic wrap, and refrigerate for at least 30   minutes.

*Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

*In a separate bowl, mix together the shredded cheese, parsley, mint, and black pepper to   make the filling.

*On a floured surface, roll out the chilled dough to a thickness of about 1/8 inch.

*Use a round cookie cutter or a glass to cut out circles from the dough. The size of the   circles will depend on your preference, but typically 3-4 inches in diameter works well.

*Place about a teaspoon of the cheese filling in the center of each dough circle.

*Fold the dough circle in half to form a half-moon shape, then press the edges firmly to   seal. You can use a fork to crimp the edges for a decorative touch.

*Repeat the process with the remaining dough circles and filling.

*Place the sambusak on the prepared baking sheet and brush the tops with beaten egg.

*Bake in the preheated oven for about 20-25 minutes or until golden brown.

*Remove from the oven and let them cool for a few minutes before serving.

*Cheese sambusak can be served warm or at room temperature. They are delicious as an   appetizer or snack.
