Ingredients:
1-1 cup red lentils
2-1 large onion, finely chopped
3-2 cloves of garlic, minced
4-2 carrots, diced
5-2 tablespoons olive oil
6-1 teaspoon ground cumin
7-1 teaspoon ground coriander
8-4 cups vegetable or chicken broth
9-Juice of 1 lemon
10-Salt and pepper to taste
11-Fresh parsley, chopped (for garnish)
Instructions:
1-Rinse the red lentils under cold water until the water runs clear. Drain and set aside.
2-In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and translucent.
3-Add the diced carrots to the pot and cook for another 2-3 minutes.
4-Stir in the ground cumin and ground coriander, and cook for an additional minute to toast the spices and release their flavors.
5-Add the rinsed lentils to the pot and stir well to combine with the other ingredients.
6-Pour in the vegetable or chicken broth and bring the mixture to a boil.
7-Once the soup reaches a boil, reduce the heat to low and let it simmer for about 25-30 minutes or until the lentils are fully cooked and tender.
8-Using an immersion blender or a countertop blender, carefully puree the soup until smooth. If using a countertop blender, work in batches and be cautious of the hot liquid.
9-Return the pureed soup to the pot and season with salt and pepper to taste. Stir in the lemon juice for a tangy flavor.
10-If the soup is too thick, you can add more broth or water to achieve the desired consistency.
11-Bring the soup back to a simmer for a few more minutes to allow the flavors to meld together.
12-Serve the Shorbet Adas hot, garnished with fresh chopped parsley.
13-Optionally, you can drizzle some extra olive oil on top before serving.
